Other than the location, one of the key things that people remember about their holiday is the food they have, and (in no particular order) this is followed by the cocktails by the pool, the wine with the meal, the ambience, the service, and so on. 
 
So this is your domain!
 
Your role as Food and Beverage Manager is to take charge of this area and deliver the highest level of expertise in managing all these components of the experience for guests.  You must ensure that no guest departs with a negative experience.  In today's high pressure environment, expectations from guests will even be higher for achieving the best value. 
 
At the same time, you will utilise your talent to profitably manage the restaurants and bars.  In taking responsibility for this area, as well as staff management and training, you will also oversee areas such as entertainment to ensure maximum enjoyment of guests and diners. 
 
What is important here is that whilst some  "corporate" experience is handy, most important is the ability to hands-on manage your team and not rely on a management structure to ensure maximum performance.
 
So as well as experience in a hotel or resort, appropriate qualifications from a recognised institution are imperative.
