Reporting to the F&B Manager, your prime responsibility is the efficient and effective running of the resort restaurant.  You will need to be an accomplished Restaurant Manager and have had experience running a restaurant either in another resort, or certainly a hotel.  If not, then a recognised and successful insitution.  You'll know what running a good restaurant is all about, have excellent people skills, and be able to communicate with guests in a manner that enhances the experience they have whilst staying at the resort.
